Beef Tartar and Truffle Cream

Serves 4

Cream:

Ingredients

  • 200 g Jarlsberg cheese
  • 2 egg yolks
  • 2 tbsp water
  • 1 dl olive oil
  • 1 tbsp white truffle oil
  • 1 pinch of salt

How to do it

  1. Grate the cheese and combine with the rest of the ingredients, exept the white truffle oil, in a small pot.
  2. Gently heat the mixture while stirring constantly until the cheese has melted. Do not bring to the boil!
  3. Take the pot off the heat and use a blender or mixer to mix it into a smooth cream.
  4. Add the white truffle oil.
  5. Allow the cream too cool down slightly before serving.

 

Beef Tartar:

Ingredients

  • 250 g highest quality fillet of beef
  • 1 tbsp virgin olive oil
  • Watercress for serving

How to do it

  1. Dice the meat and place in a bowl.
  2. Pour over the olive oil and stir.
  3. Serve with white truffle cheese cream, pickled Jerusalem artichokes and watercress.

 

Pickled Jerusalem Artichokes

Ingredients

  • 200 g Jerusalem artichokes
  • 1 dl white wine vinegar
  • 1 dl white sugar
  • 1 dl water

How to do it

  1. Mix vinegar, sugar and water in a small pot and bring to the boil.
  2. Peel and dice the Jerusalem artichokes and put hem in the hot mixture.
  3. Remove the pot from the heat and allow to cool down before serving.
