Garlic Steak & Veal Dance


Serves 4

Veal dance:


  • 200 ml raw milk
  • 200 ml standard milk
  • 2 tbsp. sugar
  • 1 pinch of salt
  • 2 pinches crushed cardamom

How to do it

Mix all ingredients together in a bowl until the sugar has dissolved. Pour into oven safe serving bowls and cook in oven at 150 C for 15 minutes. Serve with fresh raspberries.

Garlic steak:


  • 600 – 800 g organic high quality beef (rib eye or sirloin)
  • 2 tbsp. cold pressed rapeseed oil
  • 6 cloves fresh garlic
  • 200 ml fresh soft cheese
  • 4 tbsp. white wine vinegar
  • 3 tbsp. sugar
  • 1-2 red onion
  • 200 g kale
  • Butter for frying
  • Salt and pepper

Garnish with fresh parsley.

How to do it

Fry the meat in a hot pan to your liking. Salt and pepper to taste. Peel and add the garlic and the rapeseed oil at the end. Place the meat on top of the garlic in the pan and cook until the garlic is soft and golden. Remove the meat from the pan and allow resting for 10 minutes before serving. Place the garlic in a smoker and smoke it for 5 minutes. Mash the garlic by pressing it with a knife and mix with the soft fresh cheese and one tablespoon of white wine vinegar. Salt to taste.

In a bowl combine the rest of the vinegar and sugar until the sugar has completely dissolved. Peel and slice the red onion thin and let it soak in the sweet vinegar for 15 minutes before serving. Peel the kale and fry in a little butter. Salt to taste.
