Moose taco and cloudberry salsa

Serves 4

Gahkku bread:


  • 500 ml milk
  • 100 g butter
  • 25 g yeast
  • 50 ml syrup
  • 1 tsp. salt
  • 100 ml rye flour
  • Approx. 1 lit wheat flour

How to do it

Melt the butter and add the cold milk. Heat until the mixture is 37 C. Pour the mixture in a large bowl and add yeast, syrup and salt. Using your hand, work in the rye flour and the wheat flour until you get smooth dough. Set to rise under a towel for 30 minutes. Use a rolling pin and make flat round cakes 2-3 mm thick and 20 cm wide. Bake directly in a hot and dry frying pan 2-3 minutes on each side.

Cloudberry salsa:


  • 500 g cloudberries
  • 1 red chilli – chopped
  • 1 clove garlic – chopped
  • 1 tbsp white wine vinegar
  • 1 tbsp sugar

Put all ingredients in a small pot and bring to the boil. Cool down before serving.

Vinegar onions:


  • 1 large yellow onion – chopped
  • 100 ml white wine vinegar
  • 100 ml sugar
  • 100 g butter
  • ½ tsp salt

Put all ingredients in a pot and bring to the boil. Serve room tempered.



  • 700 g minced moose meat
  • 2 tbsp cooking oil
  • salt and pepper
  • 100 g mache salad
  • 200 g Gouda or Cheddar cheese

How to do it

Fry the meat in a hot pan and season to taste.
Serve the meat on Gahkku bread with cloudberry salsa, vinegar onions, salad and grated cheese.
