Mustard-Coated Pike and Mash

Serves 4

Fish:

Ingredients

  • 700-800 g garpike fillet, skin off
  • 2 tbsp mustard, sweet and hot
  • 1 egg yolk
  • 200 ml rye flour
  • 4 tbsp. butter – for cooking
  • Salt

How to do it

  1. Cut the garpike in 10 cm long pieces.
  2. Mix mustard and egg yolk in a bowl.
  3. Roll the fish in the mixture and the in the rye flour.
  4. Fry in a hot pan with a generous amount of butter. Salt to taste.

 

Potatoes:

Ingredients

  • 800 g potatoes
  • 150 g butter
  • 100 ml cream
  • 100 ml milk
  • Salt

How to do it

  1. Peel and cook potatoes in lightly salted water until they are soft and break easily.
  2. Pour out the water.
  3. Add butter and cream to the potatoes and use a whisk to beat it into a smooth pure.
  4. Add milk and salt to taste.

 

Vinagrette:

Ingredients

  • 6-8 radishes
  • 1 bunch fresh dill
  • 4 tbsp. fresh grated horseradish

How to do it

  1. Peel and slice the onion very fine.
  2. Combine all ingredients in a bowl and leave for 15 minutes before serving.

 

Garnish:

Ingredients

  • 2 tbsp. white wine vinegar
  • 2 tbsp. sugar
  • 1 red onion

How to do it

  1. Slice the radish very fine using a mandolin.
  2. Place the slices in cold water. It will make them crunchier.
  3. Put in the dill leaves.
  4. Combine all ingredients to a salad.
  5. Serve on top of the garpike with pickled onion, dill, radish, horseradish and the potatoes.
