Pork Stew & Tomato Salad

Serves 4

Pork:

Ingredients

  • 1 kg pork neck
  • 1 tsp. butter
  • 100 ml fresh herbs – lemon thyme, lemon basil, Genovese basil, rosemary and curry herb
  • 1 lemon chilli
  • 150 ml dark beer
  • 500 ml water
  • Salt and pepper

How to do it

Brown the meat in a hot pot in the butter and salt lightly.
Add the herbs, the beer and the water. Braise the meat under lid for 30 – 40 minutes. Use a stick and pierce the meat to see that the juice from the meat is clear. Remove the meat and add the chilli to the stock. Remove the chilli when you have reached the desired strength. Reduce the jus slightly if you prefer a sauce with more power. Serve with a fresh potato salad.

Potato salad:

Ingredients

  • 600 g cooked fresh potatoes
  • 500 g tomatoes in different colours
  • 3 spring onions – chopped or sliced
  • 1 bunch fresh dill – chopped
  • 1 bunch fresh mints – chopped
  • 1 clove garlic – chopped
  • 2 tbsp. white wine vinegar
  • 3 tbsp. virgin rapeseed oil
  • Salt and pepper

How to do it

Cut the potatoes and tomatoes in big pieces. Combine with all other ingredients in a large bowl. Add salt and pepper to taste.
