Reindeer and Cloudberries

Serves 4

Reindeer:

Ingredients

  • 500 g renskav: reindeer meat that is thinly sliced and often sold frozen
  • 1 white onion
  • 200 g mushrooms
  • 1 tbsp butter
  • 4 juniper berries
  • 1 tbsp mesost (Norwegian brown goat cheese)
  • 300 ml heavy cream
  • Salt and black pepper
  • 8 lompe, Norwegian thin potato bread (or mashed potatoes)

How to do it

  1. In a very hot pan, fry the frozen meat directly in butter.
  2. Peel and slice the onion.
  3. Cut the mushrooms in half.
  4. Add onions and mushrooms to the meat.
  5. Crush the junipers and add these as well.
  6. Fry everything until the meat is cooked and then add mesost and cream.
  7. Cook until the cream starts to thicken.
  8. Salt to taste.
  9. Serve with cloudberries, lompe or mashed potatoes.

 

Sweet and Sour Cloudberries:

Ingredients

  • 200 g cloudberries, frozen or fresh
  • 2 tbsp apple cider vinegar
  • 2 tbsp sugar or honey

How to do it

  1. Combine all ingredients in a bowl.
  2. Gently stir the berries until the sugar has dissolved.
  3. Store in a jar in the fridge.
