Turkey Wallenbergare

Serves 4


  • 400 g minced turkey meat
  • 300 ml heavy cream
  • 2 tsp. salt
  • 300 ml breadcrumbs
  • 3 tbsp. butter –for frying
  • 200 g fresh sweet peas
  • 4 spring onions
  • 1 cucumber
  • 1 tbsp. acidic vinegar
  • 1 pinch of salt
  • 75 ml sugar
  • 100 ml chopped fresh parsley

How to do it

Combine minced turkey meat, heavy cream and salt in a bowl. Shape into small patties and roll in breadcrumbs. Fry in a pan on medium heat in butter until golden.

Cut the spring onions into big pieces and sauté at low heat in a pot together with the sweet peas, one tablespoon of butter and a little water. Salt to taste.

Slice the cucumber into very thin slices and place in a bowl. Salt lightly and press out the water of the cucumber. Do not throw out the water. Add acidic vinegar, sugar and chopped parsley.
For a hearty meal – serve with mashed potatoes.
